Pancake Day: Traditional British Pancakes

🥞 Shrove Tuesday is here, and there's no better way to celebrate Pancake Day than with these perfectly traditional British pancakes! Unlike thick American-style pancakes, these beautifully thin, crepe-like pancakes are what Pancake Day is all about. They're surprisingly simple to make and absolutely delicious with classic lemon and sugar or your favorite toppings.

Ingredients

  • 100g plain flour (all-purpose flour)
  • 2 large eggs
  • 300ml milk
  • Pinch of salt
  • Butter or oil for cooking

Classic Pancake Day toppings:

  • Caster sugar and fresh lemon juice (the traditional way!)
  • Golden syrup
  • Fresh berries
  • Chocolate spread
  • Jam

Method

Make the batter:

  1. Sift 100g of plain flour into a large mixing bowl and add a pinch of salt
  2. Make a well in the centre and crack 2 large eggs into it
  3. Begin whisking the eggs, gradually incorporating the flour from the edges
  4. Slowly add 300ml of milk, whisking continuously until the batter is smooth and similar to thin cream

Rest the batter: Let the batter stand for about 30 minutes. This crucial step helps the flour fully absorb the liquid and creates tender, perfect pancakes - well worth the wait on Pancake Day!

Cook the pancakes:

  1. Heat a non-stick frying pan over medium heat and add a bit of butter or oil
  2. Once hot, ladle some batter into the pan, quickly tilting the pan to spread the batter thinly across the surface
  3. Cook for about 1 minute until the bottom is lightly golden and the top begins to set
  4. Here's the fun part - flip the pancake! (Or give tossing a try if you're feeling brave)
  5. Cook the other side for another minute until golden

Serve immediately: Serve the pancakes hot - they're traditionally topped with a sprinkle of caster sugar and a generous squeeze of fresh lemon juice for that authentic Pancake Day experience. Fold or roll them up for easy eating!

Repeat with the remaining batter, adding butter or oil as needed. This recipe makes approximately 8-10 thin pancakes - perfect for sharing on Pancake Day!
